    An Easy Weeknight Meal

    Years ago, I saw someone share a weeknight meal that her family loved. It looked good, it looked simple to put together, and that immediately caught my attention. I tried it myself, tweaked it a bit, and it quickly became one of those meals I come back to when I need dinner to be easy and dependable.


    Since we all need more of those kinds of meals, I knew I should share it too.


    Now, I honestly don’t remember what she called it, so I call it Kielbasa Veggie Bake, and its ingredients are exactly what the name says. I will give you the recipe exactly how I make it, and then you can decide if the veggies I use are what your family likes too. Another thing I love about this meal is that you can use what you have and it will still turn out great! I think those chicken apple sausages would work great in place of the kielbasa too.

    So, as you can see, simple, easy to put together, and as a bonus, while it’s baking in the oven, you can easily clean up the few dishes you did use to prepare it. Plus, the tin foil/parchment paper just rolls up and gets thrown away so that’s one less pan you will have to clean 😉.
